Why would I post about Stupid Easy Gluten Free Meals? Well, because everyone, even those avoiding gluten get in a pinch sometimes. We don’t have to go through a drive through and consume a burger minus the bun (ew!). We can find gluten-free meals right in our own kitchens. Some of these meals, I bet we have lying around now. They are easy to pull off!
Let’s get started and feel free to branch out from these meals. Add to them a little. Make it fun to cook, gluten-free.
A Bean and Rice Burrito (in a corn or other gluten-free tortilla). You could buy a frozen variety such as Amy’s or Glutino, or make your own. Heck, even eat up just the beans and rice! You have protein, fiber, and grains in this meal.
Salad with grilled meat or even cheese or nuts. Be careful with nuts. If they are coated in something, make sure it isn’t with a wheat mixture. A big garden salad is HEALTHY! It’s easy. Most of all, it tastes great, giving the eater great energy.
Omelet or Scrambled Eggs. Add some veggies, cheese, maybe meat or tofu… “BAM!” You’ve got yourself a meal. Breakfast at dinner time is always fun or brunch! Mix it up. Splash it with some fun sauce. Gluten free does not need to be boring.
Cuban black beans topped with rice. This was a new one for me. But, it is good. It is also vegetarian friendly. Give this mainstay a try.
Tomato Spaghetti Sauce with Gluten Free Pasta. This one is NOT meat and potatoes! Boom! Gluten free pasta has come a long way, Baby. Try some different brands, textures, and ingredients. I buy my pasta in the regular aisle now, as I have found the “Brand-name,” pastas taste better than traditional gluten-free brands. Try it. You might like it!
Chicken taco on corn tortilla, or in a soft gluten-free tortilla. I’ve said it before, but I’ll say it again: Mission has a great Gluten Free Tortilla. It is soft and not so gritty. Grill up some chicken in some spices. Add some cheese and the shell & “Bam!” we have dinner. Add lettuce or salsa, and now it’s even a balanced meal. Enjoy! Taco Tuesday can still happen, even Gluten-free.
Loaded baked potato! I love this. Pop a tater in the nuker (microwave) or oven. Get crap done while it cooks. Add a little butter, some cheese, bacon, broccoli, chilli, salsa, ketchup, the backyard, etc. and you have yourself a… MEAL! Stupid easy. Love this!
Tofu and Veggie Stir-fry. Or add meat if you are a carnivore. Just make sure with this one, that the base you choose is gluten-free. La Choy is gluten-free. There are others. I shop for these in the regular section of the grocery, because often the sauces are still gluten-free, but less than buying sauces in the “Gluten-Free” Area.
This is bar far the stupidest, easiest meal. Get ready for this: buy a prepared meal at the grocery store! Udi’s has good ones that you throw in a pan and it serves 2.5 people (so I eat it all). Look for items to make sure they are gluten-free. In this stupid easy meal, a gluten-free frozen pizza never hurts as an option as well.
